Saute * garlic diced onions, diced carrots, diced capsicum or bell peppers in 1 spoon of olive oil, once sauted add in fresh tomato puree and add herbs like thyme and basil mix well. Add salt , pepper powder and red chilli flakes according to your preference. Leg all them cook well in medium heat. Add water for not so thick consistency. Grind this using a grinder and make a gravy paste. Melt in 1 spoon of butter ( optional) . Pour the mixture to a over glassware , lay in sliced brinjal, aubergine, zucchini and tomatoes in a pattern you like and bake for 15-20 mins. Voila its ready.
