I put kale in my eggs too! I even use frozen kale. I add red or green onions, poblano pepper, jalapeno or Serrano peppers, bacon and/or ham. Your omelette is right up my alley!! I haven't had brekkie and you've inspired me to go and make a kale omelette.

Like kale salad, kale added to soup etc. Not eating eggs since diagnosed as sensitive to yolks and whites. Miss my omelettes, breakfast casseroles and egg on toast for breakfast. I like eggs.
