660cal the lot. This will be lunch and dinner for me! Rice and vegetables, although simple, are one of my favourites.

Looks great Emily but can't you add few slices of chicken or similar for dinner 😋

I'm vegan 😊 I like to add vegan cheese or lentils!

I know a lot of people think I'm missing out and they tell me so. But I have actually eaten meat a few times in the past years (I haven't always been the strictest vegan, but my total of meat meals is probably around ten), and to be honest I don't feel I'm missing out on anything. I still eat pizza once or twice a month but it's always homemade with bought vegan cheese and it tastes like ordinary pizza from an Italian place 😋😋😋

I'm vegan too and a meal like this is literally one of my favorite things in the world. I add cashew nuts to this type of thing sometimes, they have a fair amount of iron.

Looks so yummy, Fab idea to split between lunch and dinner.
I'm not vegan /vegetarian but really enjoy meat free days too, my friend is vegetarian but doesn't like certain textures of food so she is limited with choices but she would love this idea as do I 👍
