BRAVO!! How are you cooking them?? I LOVE the zucchini grilled w/some season salt and pepper, or sauteed with oninons, and a bit of oil. There are a few good recipes here for green beans, too! :) Keep up the great work! lol I'm thinking you'll not gain from the veggies, though. ;)

That's funny! Great breakthrough for sure. I love a lot of veggies but zucchini and carrots are not my favorites. I recently discovered that I like asparagus after having it grilled at a nice restaurant. Some things have an acquired taste. Maybe you will find a few that you will really like. At least you are trying!

LOL Oh no... no wonder you don't like them!! =D lol I love them fresh, sauteed, oh, steamed broccoli is great with a shake of parmesan cheese, too! I think you'll think differently of them if you try to cook them from fresh and experiment with grilling! :) Great for you, for getting them IN!

cpastine just wrote that she bought Jessica Seinfeld's book "Deceptively Delicious" to sneak veggies in her kid's food. Maybe you should take a look at that book! :) You might be able to eat veggies without even knowing they're there!

no way, you won't gain weight on vegetables! are you eating them raw? even i like zucchini if it's baked with some garlic and spices :) i haaaaaaaate asparagus, if i smell it i gag! have you tried those sweet snap peas (not the snow ones they are too bitter). theyre pretty tasty! i love green beans too if they are blanched, served cold with a little sundried tomato & oil!

Jerry Seinfeld's wife wrote a cook book regarding hiding vegetables in foods so that you don't really taste them; perhaps you can get some ideas by going to her site (I'm assuming she has one - Jennifer might be first name).....

yes i really am...i am going to eat a vegatable that is not on the list that i would normally eat, every day at lunch...if after a month i still do not like them...than i will confirm what i knew as a kid...veggies are yukkie...lol...i am actually hoping for a mind change...lol...i am a little tired of saying no thanks when we go somewhere to eat...

that is a really awesome personal challenge! make sure you post any veggie palatable-making discoveries! if you find ways to eat vegetables, everyone else who hates veggies will be able to follow your advice! in my opinion, roasting is good because it brings out the natural sugars in the veggies, although they say it's better to eat them raw, it's still better than none! good luck!

my aunt told me roasted asparagus (tree limbs) with olive oil and a little mrs dash seasonings are good cold...i thought i would start with that...the hubby eats any and all veggies so he will love this challenge

My best friend doesn't like veggies a whole lot either. To me, it really limits the whole "food experience" when one has such finiky taste buds. She has tried stepping out of her comfort zone, though, and has at least taken a bite of veggies to see how she likes them. Not often does she find something she likes.... I feel sorry for her. LOL

You might want to try making a few of the recipes here that ImLuuvd gave me. Using fresh veggies and make up a batch big enough to have leftovers the next day. We love the "vegetable medley casserole" and I have served it to company and they all loved it. We also like the Balsamic Butternut Squash bake too, it gets a dark glaze on it that is so sweet and tasty.. it taste more like a yam to me or some sort of potatoe than it does a squash. those are our two favorites to serve to company and still stay on track ourselves.
I understand not liking veggies. I snuck them into my kids food by pureeing or grating them up real fine and adding them into their soups. (now my kids love all veggies). Try grating some carrots up real fine and adding some to your soups (you might want to pre-steam or cook them first)... I promise they will disappear and you won't notice a change of taste, I put them in spaghetti sauce too.

Remember good Parmesan cheese, spices, and creamy things like a lowfat cottage cheese or sour cream can help make the vegetables go down easier. I make a home-made version of aoli, using much less oil than is called for, and a hot spicy mayo as well. Vegetables boiled plain are never as delicious as lightly steamed, they have more good crunch and vitamins too.
