Was going to be for after workout but ended up taking to work with me. Made a salad dressing with MCT oil, apple cider vinegar, and half a small avocado. Salad is green leaf lettuce, spinach, carrots, and tomato.

normally do have protein, high protein works for me, but didn't have time to cook something to go in it. Had to be to work in 5 minutes and got there with 1 minute to spare

That looks great! I recently had to move to assisted living and miss my home cooking, esp my salads, fresh fruit, etc. I really miss being in control of the cooking. I see pics like this and I am SO jealous. I love spinach salads but haven't had one in awhile.

@FWlady Im sorry to hear that. I worked at an assisted living place for awhile and understand the burden of those who wish they had better options or people in the kitchens that knew how to cook better. I hope things improve for you in that department.

FWlady, I don't know where you live, but in many areas, delivery services will bring you food you order from restaurants. It won't be home cooking, but you could certainly get fresh salads as well as other things you miss. I use a service called Grubhub.
