WOW! Who needs mashed potatoes?! I made some, buttery, sour cream and chive mashed cauliflower to go along with some smothered pork chops, and it was awesome. :-) It looks like my creative juices are flowing again, and tomorrow I'll be trying my hand at making, a low carb version of, New England Clam Chowder, substituting cauliflower for the potatoes, and topping it with some crispy, applewood smoked, bacon as a finishing accent, and burst of flavor. YUM!!! :-)
