Love, love, love stir fry meals. Fast to fix, mix 'n match what ever's in the fridge. Only one skillet, a knife, and cutting board to wash. A set of chop sticks and I eat it right out of the skillet. Plus you can change up the ingredients and never actually eat the same meal for weeks.

Just a drizzle of olive oil, 21 season salute from Trader Joes, a dash of Red Hot sauce and a tiny bit of low sodium soy sauce. 😃

The key to this easy stir fry is using pre-cooked, shredded chicken breast, which I prepare in the slow cooker and use all week in many dishes, such as tacos, salad, casseroles. Having it on hand as a lean protein makes cooking easier the rest of the week. 😃
