I tried miracle noodles yesterday, the angel hair pasta variety. I made a little carb-friendly tomato sauce by using a can of crushed tomatoes and throwing in some italian seasonings, cooked it down a little then served it over my hot, calorie-free, carb free 'pasta' and YUM! Those miracle noodles are made from glucomannan, an apsorbable fiber and very little else. You have to rinse them and then cook in boiling water for only 1 minutes, then drain and pat dry. If you don't dry them, I'm told they smell funny. You can get them at www.miraclenoodle.com
They aren't horribly expensive. And they're wonderful. They don't taste exactly like our favorite pasta, but the texture is there, and if you're putting sauce on it, who cares?
Next time, I plan to add a little meat to my sauce and some parm cheese. I've also thought about making a cheese sauce for something close to mac and cheese or pasta w/ alfredo sauce.

awesome! I've seen these and similar products,but,I didn't think they could be any good. I'm glad to know someone who tried them! maybe a little later on I'll give them a shot! Thx for posting!
