Made it to Curves this morning. I managed to get there 5 times this week! I made a black bean and corn salsa type salad mixture with green and red peppers and onions with some seasonings and lime. I have been in the mood for a mexican twist. I put some on a tossed salad and found a Southwest dressing from Paul Newman that was only 2 pts a serving. It was so delicious!! I toss my salad in a container to distribute the dressing better. It makes 2 Tablespoons go much further and I decidedly enjoy my salads more with less dressing these days. I have been trying to think of ways to mix it up a bit with salads. I have been getting tired of the norm. I may bake a potato in the oven tonight and have another salad on the side.

Hello there, I was looking over your journal way to go, I to go to Curves at least 3 days a week and I go around 3 times... I thank you for telling me about your salad, sounds yummy, and Paul's dressing is very good... Keep sending them..

It's wonderful to see you back in saddle for exercise this week! Your salads are sounding anything but tired. There are so many combinations and permutations to be experimented with. One thing I discovered quite by accident was that cooked veggies taste good with salad, too. I make a salad with very thinly sliced lean beef (could substitute chicken), sauteed mushrooms and onions (all warm) on lettuce with a slightly sweet vinaigrette dressing (sometimes with a little dijon or some garlic). It's delightful! And other leftover cooked veggies go nicely with a little salad dressing and pair well with canned tuna or hard boiled egg. Keep experimenting!

Hi there! Congrats on making it 5X to Curves! LUV your idea for the Black Bean & Corn Salsa Salad. I may try that tonight. I fix oven fries at least once a week - they're soooo good. Have you tried the Skinny Cow Fudgesicles? They are really yummy! Keep up the good work - TTYL.
