I'm thankful for another beautiful day; probably one of the last warm (summer like)days for about a week or so; but nevertheless, the, also, beautiful days of Fall are on their way. This stirs the imagination, to begin creating lower carb versions of some fall classics, in the kitchen, and in the smoker, which should yield some amazing results. I will also be getting a Dutch oven, to begin experimenting with. :-)

Thanks for the reminder - I need to get out that crock pot and leave it on the counter. It is so nice to come home from work and have dinner ready to serve.

Thanks, but I won't be doing any camping, I'll be doing it in the comfort of my backyard, in my BBQ pit, and over some charcoal with a mixture of fruit woods, including pear, apple, cherry and peach; which will also be used in the smoker; their primary purpose. Rubie-sue, do you have any favorite dutch oven recipes, that you'd like to share?

triaby, a lamb stew would be great, but a thought just came to mind; I was checking out a Hungarian Goulash recipe, online, yesterday, and that would be perfect for a Dutch oven; and with the added layer of flavor coming from the wood smoke, there are some delicious meals ahead.

I love love love Hungarian Goulash. Did you find one low carb? You obviously have a love of food, as I do. Cooking for myself has been a real pleasure for me lately ... since I discover Paleo. I just bought a Lodge dutch oven myself. I just sent you a friend request. Hugs!

M2B, yes; I've found a Hungarian Goulash recipe that is low carb. The site, that I found it on, is not a low carb site; it's actually one that features German food recipes, so you have to pick and choose, from what's being offered, to stay within the realm of low carb eating. I'll be getting a Lodge dutch oven myself, in the coming weeks, and it will be perfect for making the goulash. And yes, I am, almost, fanatical, about the enjoyment of great food; and it's a blessing to have the skills to make it. "My Grandma Emma's Goulash", is the one I believe to be the most compatable with a a low carb lifestyle, because all you'd have to do, is make it with about half the onions, and use some onion powder in place of it. This recipe, practically, screams to be cooked in a dutch oven. Enjoy!
