My neighbor switched exclusively to lard for his cooking "oil" and he has lost 40 pounds. I don't cook with that much fat, so I don't think switching would make that much difference, but it's intriguing.

Lard has fewer trans fats and less cholesterol than equal amounts of butter by wr.

It is time that we spend with people we love that matters most. Better for our health than anything else. Based on my personal experience, I don’t think you will lose weight just by switching to a different kind of fat for cooking but I ditched vegetable oil many years ago and have no regrets. I still use some good quality olive oil for salad dressing but cook mostly with animal fat or butter. Beef tallow is less versatile than lard or chicken or duck fat, but give it a try. Pemmican is an interesting experience unless you grew up eating it on regular basis.

I remember eating pemmican as a child. I just seem to remember it being kind of grainy and tough. Kind of like a soft hockey puck. Not a lot of texture. I think I'd be interested in it as a 'shelter in place' food. I'm intrigued by the idea of dried berries in it as well. Huckleberry comes to mind as does Rosehip for the vitamin c content. I'm really interested in the tallow for eggs and cooking meats. With one year storage in a cool, dry location, I'm really curious. Hunting season is coming. I could do lard from black bear (as well as bear bratwurst, yum) and moose pemmican with beef tallow. These seems like some of those day to day methods of storage rather than strictly a survival method from the past.

I head home tomorrow, JP. I'm leveling off, but it'll come down once I'm home and back in my routine.
